Macaroni and cheese is the ultimate comfort food that is quick to cook up and is the perfect midweek meal.

There is nothing better than something cheesy and gooey for dinner, and cooking legend Gordon Ramsay has shared his simple recipe for making his hearty meal.

Not only is it super simple to make, but it takes less than 30 minutes to make and is guaranteed to be loved by everyone in the family no matter their age.

Gordon’s secret to making this pasta make is to use both macaroni pasta and cauliflower for the texture as well as using three different cheeses to make sure it is packed with flavour.

How to make Gordon Ramsay’s macaroni cheese and cauliflower bake 

Ingredients:

  • 300g of cauliflower florets
  • 300g of dried macaroni
  • 60g butter plus extra for cooking
  • Four tablespoons of plain flour
  • Two tablespoons of English mustard powder
  • 100g of grated mature cheddar
  • 100g of grated Lancashire cheese
  • 100g of Cheshire cheese
  • Three tablespoons of breadcrumbs
  • Thyme
  • Cayenne pepper
  • Salt

Kitchen equipment:

  • Large pan
  • Large mixing bowl
  • Strainer
  • Wide gratin dish

Instructions: 

To begin, take a large pan and place on the stove. Add salt and water then bring a boil. Add your cauliflower and cook for around five minutes until the vegetables are tender. Once ready, remove from the pan, strain, place on a bowl and put aside for later.

Place your macaroni into the boiling hot water and cook until softened. Cook following the packet instructions. Once ready, drain and place in a bowl and mix well with the cauliflower.

Preheat your oven to 200C (400F) or to Gas Mark 6.

Now it is time to make the sauce. Place the 60g of butter in a pan and sir in both the flour and mustard powder. Slowly add in the milk and continue to mix until you have a smooth mixture.

Slowly bring the mixture to a boil on a low heat, and keep mixing frequently until it begins to thicken. Add in your cayenne pepper and salt.

Combine your grated cheese together and add half to your cheese sauce. Mix until the cheese has melted and your sauce is smooth again. Add in your macaroni cheese and cauliflower and mix to make sure everything is evenly coated.

Pour your macaroni and cheese into a gratin dish and evenly spread. Add the remaining cheese to the top of the dish, and then add your breadcrumbs and thyme.

Bake for around 20 minutes until the top looks golden brown and crispy. Once cooked, your creamy macaroni and cheese is ready to serve fresh out of the oven.
