It is now late October and Halloween is just around the corner, so lots of people are looking for some fun but easy dishes to serve if they are having a party.

Gordon Ramsay has recommended cooking up a smoky pulled pork with a chipotle, as not only does it look impressive but it is very easy to make up. In a video online, Gordon Ramsay said: “If you’re having a Halloween party…[this recipe is] perfect for sharing!”

This recipe is best if prepared a few days before your Halloween party in order for the meat to come out as flavourful as possible, and will need to be slow-roasted so the meat easily falls off the bone.

Gordon Ramsay explained: “Like some of the best party dishes, marinating the pork shoulder can be done days in advance.

“If I was doing this for a Sunday, I would start marinating on the Thursday or Friday so it gets even tastier… very easy [to make] but takes five and a half to six hours in the oven.”

How to make smoky pulled pork with chipotle mayonnaise

Ingredients

For the pulled pork:

  • One pork shoulder
  • Four onions
  • Three gloves of crushed garlic
  • Three tablespoons of smoked paprika
  • Two tablespoons of brown sugar
  • Fresh thyme
  • Salt and pepper
  • Olive oil

For the chipotle mayonnaise:

  • 300g of plain mayonnaise
  • Three tablespoons of chipotle paste (or smoked paprika)
  • One tablespoon of honey
  • One tablespoon of wholegrain mustard
  • Salt and pepper

Kitchen equipment:

  • Mixing bowl
  • Large roasting pan
  • Tin foil
  • Small bowl

Serving recommendations:

Instructions

To make the pulled pork:

To begin, make the marinade. Take a mixing bowl and add your crushed garlic alongside the paprika, brown sugar, salt and pepper. Mix this until well combined and then slowly add olive soil to the mixture until it becomes a paste. Add the fresh thyme but make sure to keep the thyme stalks.

Pour your marinade onto the pork and massage it into the skin. Drizzle some olive oil on top of the pork in order to keep it moist. The longer you let it marinade the better it will taste. Ideally, place in the fridge three days prior to cooking for the ideal pulled pork.

Once the pork has been marinated and you are ready to serve, preheat the oven to 140C.

Cut the onions into quarters and let them sit at the bottom of the pan. Add the thyme stalks on top of the onions and then place the pork shoulder on top.

The slower you cook the pork, the juicer and more tender it will be. Place your pork shoulder in the oven and cook for around five and a half hours to six hours, until the pork is falling off the bone.

Once the pork has been cooked, remove it from the tray, cover it in tinfoil and let it rest for half an hour.

You will be able to easily remove the pork from the bone using a fork. Place in a bowl and your deliciously tender pulled pork is ready.

To make the chipotle mayonnaise:

In order to make the chipotle mayonnaise, simply add several tablespoons of mayonnaise to a small bowl. Then add honey, chipotle paste (or smoked paprika) and wholegrain mustard along with some salt and pepper. Stir together and serve with your pulled pork.
