Warm weather and sunny skies are a welcome change from the cold and soggy spring the UK has seen so far. With a bank holiday weekend, many Brits will be enjoying three days off work in the sunshine, and may even enjoy an alcoholic beverage or two.
Iconic summer cocktails like Pimms, mojitos and daiquiris aren’t that hard to make at home, requiring few ingredients.
You can even switch things up, adding different fruit and even different alcohol for a twist on the classic.

Pimms
This is perhaps one of the easiest cocktails to make, effectively adding everything to one jug!
Ingredients
- 200ml Pimm’s No. 1
- 600ml lemonade
- mint sprigs, sliced cucumber, sliced orange and strawberries, to serve
Method
Fill a jug with ice and pour over the Pimm’s and lemonade.
Give it a good stir then add the mint, cucumber and fruit.
Mojito
Ingredients
- juice of 1 lime
- 1 tsp granulated sugar
- small handful mint leaves, plus extra sprig to serve
- 60ml white rum
- soda water, to taste
You can also add flavours like strawberry, blueberry, mango and any other fruit you fancy to change it up.
Method
Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go – you can use the end of a rolling pin for this.
Pour into a tall glass and add a handful of ice.
Pour over the rum, stirring with a long-handled spoon.
Top up with soda water, garnish with mint and serve.
Strawberry Daiquiri (Frozen)
Frozen daiquiris are the adults answer to a slush, with rum and fruit flavours in a frozen drink.
This recipe is for a strawberry daiquiri, but you can switch to mango, blueberry or any other fruit you wish.
Ingredients
- 500g strawberries, hulled
- 200g ice
- 100ml rum
- juice ½ lime
Garnish
- 1 strawberry, halved
- 2 slices of lime
- 2 cocktail sticks
Method
Blend the strawberries then push the resulting puree through a sieve to remove some of the seeds.
Tip the sieved puree into the blender again and add the ice, rum and lime juice.
Blend again and divide the mixture between two Martini glasses.
Thread the lime slices and strawberry halves onto the cocktail sticks and place onto the edge of the glass, serve immediately.
