Making sausage rolls from scratch is a tradition for many people in Britain during the holiday season, but there is a “quick and easy” way to perfect this snack for Christmas.
There is nothing tastier than homemade sausage rolls, but you can make this savoury snack without having to worry about going to the shops with a long list of complicated ingredients.
Jamie Oliver has shared his recipe on how to make the perfect sausage roll using only a handful of affordable ingredients.
The main two ingredients for this dish the butter pastry and good quality sausages, but it can be customised however you like. In this recipe, Jamie simply uses sage, nutmeg, and a few tablespoons to make a “really beautiful” sausage roll.
In a video online, Jamie said: “I want to show you how to make the most beautiful sausage rolls that are absolutely incredible with amazing colour… homemade sausage rolls are so easy, this is a great cheat recipe.”
How to make Jamie Oliver quick and easy sausage rolls
Ingredients
- Ready-made butter puff pastry
- Good quality Cumberland sausages
- Fresh sage (or rosemary or thyme)
- Fresh nutmeg
- A few tablespoons of English mustard
- Eggwash (combine one egg and milk in a small bowl)
- Sesame seeds (optional)
Kitchen equipment
- Fine grater
- Baking tray for cooking

Instructions
To begin, squeeze the meat out of the sausages from their skin and place it in the centre of a sheet of puff pastry. Make sure to place the sausage right to the edge because it will shrink when being cooked.
You can use any herbs you wish with this recipe such as rosemary or thyme, but Jamie uses sage. Simply tear off the fresh sage and scatter it generously around the pork meat.
Jamie said: “As the fat starts to cook out of the sausage meat, it starts to fry the sage, the flavour is so good.”
Next, grate the fresh nutmeg generously onto the pork meat and then add a few dollops of English mustard on the pork meat. Jamie said: “I know English mustard can blow your head off sometimes, but trust me when this cooks in the meat, it just turns into something truly delicious.”
Make an eggwash by mixing one egg and milk in a small bowl. Next, brush the egg on one side of the pastry around the pork meat.
Fold one side of the pastry over to the other side, making sure to use a fork to seal the joint. Eggwash all of the surface of the pastry and then add the sesame seeds to the top of the sausage roll for decoration.
Place the sausage roll on a baking tray in the oven and cook for around 25 minutes at 180C (350F) until the sausage roll is “crispy and golden” according to Jamie.
Once out of the oven, your tasty sausage roll is ready to serve either as a giant sausage roll or cut into pieces.
Jamie said: “Really gorgeous and really beautiful. You can just serve it on a beautiful board and people can just cut the portion the way they want it.
