On those chilly fall and winter nights, nothing sounds better than cozying up to the dinner table with a big bowl of hearty pasta. And Giada De Laurentiis has just the recipe to warm you up when the autumn chill sets in. She recently made a chicken ragu pasta sauce over on Instagram and it’s the perfect easy meal that comes together in about 30 minutes.
“I love this because it’s a one-pot meal [and] it’s a lighter ragu,” De Laurentiis said in her video.
Traditionally, most Italian ragus are made with beef, pork, or sausage, but to make this dish a bit less heavy, De Laurentiis opted for ground chicken. But, you can really substitute the ground chicken for whatever ground meat you have on hand — turkey would be a good lighter option, too.

In a large skillet, you first saute shallots, garlic, and oregano in olive oil to create an herbaceous base.
“This is my favorite, favorite oregano,” De Laurentiis said of the Filippone organic oregano, which you can grab from Giadzy. “It’s from Sicily, and in my opinion, it’s the best oregano you can get. It creates this lemony, sweet, herby flavor.”
Then, add your ground chicken, separate it with a wooden spoon, and cook thoroughly. Use wine to deglaze the skillet and then add your favorite jarred marinara sauce. Let everything simmer together for about 10 minutes, and add salt and pepper as needed.
Cook your favorite wide pasta (pappardelle, linguine, or tagliatelle will work great) and add it straight to the sauce. Plate up, serve, and watch everyone sink into that warm and cozy feeling.
