Today is the third day of Diwali, which is thought by some to be the height of the Hindu festival of light.
Part of tonight’s celebrations include enjoying mithai – with laddu, gulab jamun, and nankhatai among the sweet treats shared.
Traditional sweets will of course be popular, but some young cooks have been putting their twist on the sweets they love. One of these is Oreo burfi.
Burfi or barfi is a condensed milk based, fudge-like confection. Typically, it’s filled with fruits or ground nuts, and ingredients like rose water or cardamom can be added for an extra flavour note.
Shilpa – who runs food blog Some Indian Girl – has given burfi a contemporary revamp for Diwali this year, using Oreos in the mixture to create a fusion kids and adults can enjoy.
The best part (aside from the taste, obviously) is that it’s super easy to make and uses just six ingredients. Here’s how to do it at home.
- 1 cup condensed milk
- 1¼ cup milk powder
- 6 Double Stuff Oreo cookies – or equivalent – chopped
- 2 tsp vanilla extract
- ½ tsp ghee
- 2 tbsp sugar (optional_)
In a cold pan, whisk together the milk powder, ghee, and condensed milk.
Turn the pan on, and whisk as the mixture heats (about five minutes) until it starts to pull away from the pan and look more like a dough.
Once it’s all come together, remove from the heat and mix in your vanilla extract, then let stand for 10 minutes.
Next, add your chopped up biscuits and spread into a lined baking tray to cool for at least three to four hours (although overnight is best).
From there, you can simply cut into squares and serve.
