Everyone was baking banana bread during lockdown but six months on, you might be a little sick of the stuff.

If you still fancy a sweet treat that’s labelled as a bread (but we all know is really a cake), try this gingerbread loaf instead.

With the leaves turning orange and pumpkin spice lattes back on the menu, we know autumn is here and this spicy treat is perfect for the season.

It’s not quite a low ingredient recipe but you probably have a lot of the things hiding in the cupboard.

It’s so easy you’ll be able to whip it up in your working from home lunch hour.


  • 225g plain flour
  • 115g sugar
  • 1 tsp cinnamon
  • 1 teaspoon mixed spice
  • 1 tsp ginger
  • Pinch of salt
  • 115g butter
  • 2 tbsp treacle (or for a lighter cake, 1 tbsp treacle and 1 tbsp golden syrup)
  • 150ml of milk
  • One egg
  • 1 teaspoon bicarbonate of soda
