In one week I will graduate with my bachelors in nutrition and dietetics. Crazy. College was something that I always just wanted to be done and over with but somehow this graduation feels to of snuck up on me. ? I am grateful to have majored in this field and I am so proud of myself for getting through it. {Anyone who thinks nutrition majors are just baking in a kitchen all day don’t talk to me ??‍♀️} Now onto this delish meal ?? . Arugula + chili sweet potato wedges + cucumber + avocado + broiled salmon with lots of dried dill (I used @tallulahalexandra broiled salmon recipe ??) . For the wedges: preheat over to 375. Slice 2 medium sweet potatoes into thick wedges. In a bowl, add the wedges + 2 tablespoons melted coconut oil + 1 tsp smoked paprika + 1 tsp chili powder + 1/2 tsp garlic powder + salt. Mix the spices into the wedges until they are coated in spice. Lay the wedges on a baking sheet and bake for 35 minutes, flipping halfway through. These are awesome to keep in the fridge and then add to meals as a healthy complex carbohydrate! Enjoy! Xx
